Birthday Boy(s)! (since there isn't much on the little guy)

Jason had his birthday February 2 and turned 31. As I was telling Carter how old he was, he responded "he is 1 like Kylie." It is kind of a little different. We had a great day starting with presents, Hawaiian tuna melts for lunch, Ethiopian food for dinner, and Key lime Cake that evening.

The hump of meat in the middle is semi cooked meat.

These are the cupcakes from Carter's birthday party on St. Patrick's Day. It is a rainbow (Airhead Xtreme sour something candy) with 2 pots of gold (Rolos) at the ends of the rainbow since it was St. Patrick's day. For the cake part, you start with a white cake mix and divide it into 5 bowls and scoop in a little from each color to get the rainbow look. The idea came from Pinterest. More to come on our 3 year old when I get the pictures onto the computer, but we had a fantastic weekend celebrating!



Key Lime Cake (Recipe from Michelle and it is AMAZING! It works as a sheet cake if you don't have a bundt pan.)

2 limes (I use as many limes as it takes to get the full 1/2 c of juice. I also put in the zest from one lime)
1 pkg Duncan Hines white cake mix
1 small pkg instant coconut cream pudding
1/2 c. oil
4 eggs
1 c. sour cream
milk (I don't use any)

Juice and pulp the limes and then add enough milk to measure 1/2 c. Mix all ingredients and pour into a greased bundt pan. Bake at 350 for 40-45 minutes. Let cool for 20 minutes and invert onto a serving platter. When completely cool, top with lime glaze.

Lime Glaze (This is my rough explanation on what I do)

vanilla
powdered sugar
juice from one lime
butter, melted in microwave
milk

In bowl, put melted butter (3-4 T.) add some vanilla (1 t) and lime juice. Whisk in 1 1/2 - 2 cups of powdered sugar. Thin with milk. (I play around with the flavor..sometimes I add more butter/vanilla/sugar till it tastes good.)

HAPPY BIRTHDAY, guys!!! WOW I love those cute cupcakes! And I want to try your cake recipe. Do you think I would like it? You know, considering the coconut part? I think I will have to test it! You know, for scientific research. MISS YOU!!!
